Does our life insurance get canceled at the end of the month along with the health benefits? Do we have an option to pay for it to continue?

Yes, life and health insurance goes away. It's ridiculously expensive when you're not part of verizon group plan...the irony of this is that you play the game to keep your job while your life and health deteriorates just to keep them.
Ask your precious Union to pay. What do they do with those Union dues anyway?

COBRA is waiting with baited breath to take even more money from you to pay for health benefits
You need to get a month to month policy outside the company before the end of the month.
