You know there have been too many vaccine-related threads on this board when I at first read this as: What's your favorite vaccination spot and why? And sadly, I wasn't even too surprised despite the nonsensicalness of the question.
If you got a favorite spot, don't tell anybody, they will ruin it for you. This is not about bragging rights, it's about you getting away to relax, decompress and recharge.

Mexico. Been going for years. Easy to get to and great food.
Coronado, CA - always one of the top rated beaches, average year round temperature is 72. Post card like atmosphere. Nothing comparese - check out the Hotel Del Coronado (pricey) to get an idea of the area and its history.

We live in California and Baja California and Hawaii are relatively close to us. I'd pick Kauai and Cabo. Kauai is for folks who like nature, beaches are amazing, people are cool. Cabo is great if you like to party and drink (some resorts are awesome)...
