Not sure if I should update my LinkedIn profile to reflect my layoff or wait until the pay period is over. Technically, I'm still an employee since I'm being paid by GM until the end of the month. Thoughts?

Change your end date to Feb. 2019 and set your profile to notify all of your contacts, and that you are actively applying.
You're thinking too hard about this. Don't update it, continue your search, and when it comes time to interview and the question comes up, you can tell them you got laid off. Getting laid off doesn't have a stigma at all -- it's not like everyone in the country isn't aware GM cut a ton of people...
I would leave yourself showing as employed until the end date and then turn yourself into a contractor while you look for another job. Stats show it is much easier to find a job while employed and it gives you leverage....never hint to the hiring party and desperation on your part.

I would just put the end date of GM for the job in your job listing. Don't define yourself anywhere on your profile as a "former" GM employee. Define yourself in your profile that shows a positive characteristic of yourself...such as "bright and talented IT manager fostering team collaboration and successful completion of complex IT projects". GM is just another employer.....let it be part of the list below.
