Will we still able to utilize the balance of our health & wellness benefits, if we were let go on coming Monday ? Or advice is to quickly submit the claims before Monday?

You take your HSA with you! FSA is the one that ends @employment

If you mean your health savings account, you can submit claims until your last day as a Nike employee, which seems to be about 2 months after the layoff notice. You can also get reimbursed for the entire yearly election, even though you have only contributed from paychecks before layoff.
