I’m no expert on the matter, but what happens if there is no money to pay the workers. Is that even a possibility? Are our paychecks insured in any way?

While TT and Uniti execs are busy funneling millions of dollars into their personal bank accounts, ordinary employees can't even get their bounced checks reimbursed, and are losing their homes and cars.
You file an unsecured claim with the bankruptcy court, same as everyone else Windstream isn't paying, and in fact, can't pay without prior approval by the court and trustee and a whole bunch of other hoops. Your insurance is unemployment insurance, because in that event, you'll be unemployed.
