I have finally secured a new role, and right now I'm just negotiating and finalizing the last few details. Honestly, I've had enough of this layoff cycle, and it feels like a big relief to be leaving Cisco. Now, I have a small doubt—will my RSUs continue to vest during my notice period, or do I lose them as soon as I inform my director that I have decided to leave this lousy company?

Unless you retire they go away based on last date of employment. Depending on the options you may have to execute them prior to leaving or you lose them. The last couple of rounds the vestings are taxed immediately and the remainder hits your account. Net is it depends which options and if you are quitting or retiring.
If they walk you out after you inform them, vesting stops ASAP.

Don't quote me but its your separation date. The date you are no longer on payroll or a Cisco employee.
How long are you planning to stay after you give notice? Unless its coming close to a vest date, you're probably splitting hair.
