My question is how to refuse the extra workload when one of the coworkers leaves without getting fired?
I'm doing more and more work. Every time someone leaves, it becomes more unbearable for those of us who stay. So far I've done everything without questions of any kind, but I really won't be able to do anything extra anymore. A huge workload is starting to affect my health. On the other hand, I would rather leave this company on my own when I am ready than be fired.

This same concern has been raised year after year, for at least the past 9 years. Cutting people but the work doesn’t go away. We talk about simplifying, streamlining, what should we stop, start or continue. Nothing is ever done to populate the “stop” list. Everything is always a priority.
And what happens? The work keeps getting done. Why? Because those that are burnt out leave, and a fresh new crop of joiners come in. Recycle. Repeat. As long as the work is getting done, nothing will ever change. This company has been talking about “fixing the core” for decades to make the work more efficient. The reality, it’s very broken and very complicated to fix - time and money - and management just loses patience or interest.
My advice, if it’s affecting your health, you should leave. The company isn’t capable of changing.
Whatever extra work doesn't get done.. doesn't get done. Management has to feel the burn by losing money otherwise it is a non issue. It isn't you're responsibility to pick up the slack especially if you aren't being compensated for it, or recognized for it.
Like the post above.. it is very easy. You do what you can within the allotted hours and clock out. Shut down the work computer. turn off the work phone, or set do not disturb between 5 pm and 9 am. Get on with whatever else you have going on with your life.
I mean... you literally just don't do it. If it's just 'more in the queue' then the queue grows longer. You put in your time and you clock out. And if you're thinking of leaving, put some action into that plan.
